I was so excited to be able to be part of the Smiley360 “Mission PAM”.  Knowing full well I would WIN!!

I received an exclusive PAM package consisting of a Pyrex glass dish, PAM cooking spray and a can of tomatoes.  The “Mission”?   Make your gooiest ‘stick to the pan’ recipe.
I went into this challenge 100% positive that I would beat PAM hands DOWN!!  HA!!! ON PAM!!
I made my Mexican Casserole.  It’s REALLY delicious!! HONEST! But the pan is always a soak over night nightmare! The full recipe is at the end of this post.

Mix together all the ingredients together in a big bowl.

Brown the chicken. I like to brown mine in some hot sauce.

Brown a can of drained corn.

Now see??  Doesn’t that say… you will NEVER get that pan clean?!?!  It did to me!!

So for good measure cover in cheese!!  HA!!  Soooo gonna win!!!

But wait… what if we add salsa all around the edge for good measure?!  OHHHH man am I winning OR WHAT!?!?!?!?

Bake at 400 degrees for 40 minutes!??!!  HELLO!!!  Just send me a blue ribbon now!!

I could hardly wait to finish eating just to do the dishes (Wait…. what!?!?  That never EVER happens!)  This stuff was baked on the sides!!  I grinned ear to ear when I started with water in the sink.

The pan practically came clean in running water!!!  WHAT!??!   W-H-A-T?!?!?!  Noooooooooooooooooo
NO!!!  I canNOT believe that pan came clean as quickly and as easily as it did!!  I’m still sulking!!
The only, and I do mean the ONLY, time I used any elbow grease was on the outside bottom of the pan where the salsa  over flowed.  (Next time I’m spraying PAM on the outside too!)
I still can’t believe that PAM won so EASILY!!!!!!

Mexican Casserole
1 can tomato soup
1 can corn
1 cup salsa
1/2 cup milk
8 corn tortillas cut into 1″ strips or into wedges.
1 cup shredded cheese and extra cheese to top before baking.
2 chicken breasts grilled and cut into pieces
1 can Mexican Rotel  (tomato, chilies and lime)
1 can black beans
PAM cooking spray
Mix all together in a large pan.
Spray large cooking pan with PAM (TRUST ME on this point!! DO NOT use anything other than PAM!!)
Bake at 400 degrees for 45 minutes.  Turn off oven and let set for 10 minutes.
Serve
Clean up will be a breeze because you used PAM!!!

Updating an old blog post is a lot like an archaeological dig. You expect a quick “dusting” and end up unearthing a series of questionable life choices from 2014.

I recently opened a “quick update” only to find:

  • Missing Images: Key tutorial steps now require “imagination.”
  • Dead Links: Half my brand partners have rebranded as “AI Crypto Collectives.”
  • Antique Fonts: Styles that haven’t been cool since the dial-up era.

Why I’m Optimizing This Blog

It’s not glamorous, but fixing broken links and whispering “Pick me!” to Google makes the site faster and easier for you to find. I’m not spiraling; I’m just cleaning up the blog ghosts.
